### Chicken Biryani Recipe


Chicken Biryani ek flavorful aur aromatic dish hai jo marinated chicken ko rice, spices, aur herbs ke sath combine karti hai. Ise ghar par banane ke liye yahaan detailed recipe di gayi hai:


### Ingredients


#### Chicken Marinade ke liye:

- 500 grams chicken, tukdon mein kata hua

- 1 cup dahi

- 2 tbsp adrak-lahsun ka paste

- 1 tsp haldi powder

- 1 tsp lal mirch powder

- 1 tsp garam masala

- 1 tsp jeera powder

- 1 tsp dhania powder

- Swad anusar namak

- 1 lemon ka juice


#### Biryani Rice ke liye:

- 2 cup basmati rice

- 4 cup pani

- 2-3 hari ilaichi

- 2-3 laung

- 1 tejpatta

- 1 dalchini ka tukda

- Swad anusar namak


#### Biryani ke liye:

- 2 bade pyaz, patle kate hue

- 2 tamatar, kate hue

- 2-3 hari mirch, cheeri hui

- 1 cup kata hua dhania

- 1 cup kati hui pudina pattiyan

- 1/2 cup doodh

- Kuch kesar ke dhaage

- 3-4 tbsp ghee ya tel

- Taley hue pyaz (optional, sajane ke liye)

- Uble ande (optional, sajane ke liye)


### Instructions :


#### Chicken ko Marinate karna:

1. Ek bade bowl mein dahi, adrak-lahsun ka paste, haldi powder, lal mirch powder, garam masala, jeera powder, dhania powder, namak aur lemon ka juice milayein.

2. Chicken ke tukdon ko is marinade mein dal kar achhi tarah se coat karein. Ise dhak kar kam se kam 1 ghante ke liye, aur better ho to raat bhar ke liye fridge mein rakhein.


#### Chawal tayar karna:

1. Basmati chawal ko thande pani se tab tak dhoyein jab tak pani saaf na ho jaye.

2. Ek bade bartan mein 4 cup pani ubalein. Chawal, hari ilaichi, laung, tejpatta, dalchini ka tukda aur namak daalein.

3. Chawal ko 70-80% pakne tak (parboiled) pakayein. Pani nikal kar alag rakhein.


#### Biryani banana:

1. Ek bade, bhari tale wale pan ya Dutch oven mein ghee ya tel garam karein.

2. Patle kate hue pyaz daal kar sunahra bhura aur kurkura hone tak bhunein. Aadhe tale hue pyaz nikal kar sajane ke liye alag rakhein.

3. Kate hue tamatar aur hari mirch baaki pyaz mein daalein. Tamatar naram hone tak aur tel chhodne tak pakayein.

4. Marinated chicken pan mein daalein aur madhyam aanch par chicken ke 80% pakne tak pakayein.

5. Chicken ke upar aadha paka hua chawal daalein. Chawal ke upar aadha kata hua dhania aur pudina chhidkein.

6. Baaki chawal ko upar ki parat ke roop mein daalein. Baaki kata hua dhania aur pudina chawal ke upar chhidkein.

7. Doodh garam karein aur usmein kesar ke dhaage ghol dein. Is kesar doodh ko chawal ke upar daalein.

8. Pan ko dhakkan ya aluminum foil se achhi tarah se dhak dein taaki bhaap bahar na jaye. Dheemi aanch par 20-25 minute tak pakayein (dum par pakayein) jab tak chawal poori tarah se pak na jaye aur saare flavors aapas mein mil na jayein.


#### Parosna:

- Parosne se pehle chawal ko halke se fork se phulayein.

- Tale hue pyaz aur uble ande se sajaayein, agar use kar rahe hain.

- Garam garam raita, salad ya achar ke sath parosein.
