Masala Aloo Dum Recipe
INGREDIENTS (Saamagri):
- **500 gram** chote aloo, uble aur chhile huye
- **2 bade chamach** tel
- **1 chamach** jeera
- **1 badi** pyaz, barik kati hui
- **2 bade** tamatar, puree kiye huye
- **1 bada chamach** adrak-lehsun paste
- **1 chamach** haldi powder
- **1 chamach** laal mirch powder
- **1 chamach** dhaniya powder
- **1 chamach** garam masala
- **1 chamach** jeera powder
- **swaad anusar** namak
- **2 bade chamach** dahi
- **1/2 cup** pani (avashyakta anusar samayojit karen)
- **taza dhaniya patte**, kati hui (sajavat ke liye)
INSTRUCTIONS (Vidhi):
1. **Aloo taiyaar karen:**
- Chote aloo ko ubalein jab tak ve naram na ho jayein. Chheelkar alag rakhein.
2. **Aloo ko bhoonein:**
- Ek pan mein 1 bada chamach tel garam karen. Uble aur chhile huye aloo daalkar sunehra bhoora hone tak bhoonein. Nikaal kar alag rakhein.
3. **Masala banaayein:**
- Usi pan mein ek aur bada chamach tel daalen.
- Jeera daalen aur unhein chadakne dein.
- Barik kati hui pyaz daalen aur sunehra bhoora hone tak bhoonein.
- Adrak-lehsun paste daalen aur kachchi mahak jaane tak bhoonein.
4. **Masale daalen:**
- Haldi powder, laal mirch powder, dhaniya powder aur jeera powder daalen. Achhe se milaayein.
- Tamatar ki puree daalen aur tel alag hone tak pakaayein.
5. **Aloo aur masala milaayein:**
- Bhune huye aloo masale mein daalen aur achhe se milaayein.
- Swaad anusar namak daalen.
6. **Dahi aur pani daalen:**
- Aanch dheemi karen aur dahi daalen, lagataar chalate rahein taki dahi phate nahi.
- Pani daalen, avashyakta anusar gaadhipan samayojit karen. 10-15 minute tak ubaalein.
7. **Samaapt karen aur sajaayein:**
- Upar se garam masala chhidkein aur achhe se milaayein.
- Taza dhaniya patte se sajaayein.
8. **Parosen:**
- Garam garam parosen chawal, naan ya roti ke saath.
