Dabeli Recipe
Dabeli, jise Kutchi Dabeli bhi kaha jata hai, Gujarat ke Kutch kshetra ka ek prasiddh street food hai. Ye ek masaledar, khatta aur meetha nashta hai jo ek unique aloo ki bharai ke sath banaya jata hai aur burger ki tarah bun mein parosa jata hai. Yaha ghar par swadisht Dabeli banane ki vistaarit recipe hai.
Ingredients
Dabeli Masala ke liye
2 tablespoon dhaniya ke beej
1 tablespoon jeera
1 teaspoon saunf
3-4 laung
1 inch daalchini stick
2-3 sukhi laal mirch
1/2 teaspoon kala namak
Aloo ki Bharai ke liye
4 madhyam aakar ke aloo, uble aur mase huye
2 tablespoon tel
1 teaspoon sarson ke beej
1/2 cup bareek kata pyaaz
2 teaspoon Dabeli masala
1/2 cup imli ki chutney
swaad anusaar namak
Assembling ke liye
6 pav (Indian buns)
1/2 cup bareek kata pyaaz
1/2 cup anar ke dane
1/4 cup bhuni hui moongfali
1/2 cup nylon sev (patle besan ke noodles)
1/4 cup kata hua hara dhaniya
1/2 cup imli ki chutney
1/2 cup lehsun ki chutney
1/4 cup makhan
Vidhi
Dabeli Masala banana
Ek pan mein dhaniya ke beej, jeera, saunf, laung, daalchini stick aur sukhi laal mirch ko khushboo aane tak sukha bhoon lein.
Unhe thanda hone dein aur fir bareek powder mein pees lein.
Ismein kala namak milayein aur achhe se milayein. Masale ko airtight container mein store karein.
Aloo ki Bharai tayar karna
Ek pan mein tel garam karein aur usmein sarson ke beej dal dein. Unhe chadakne dein.
Bareek kata pyaaz dalke golden brown hone tak bhoon lein.
2 teaspoon Dabeli masala dalke ek minute tak bhoon lein.
Mase hue aloo dalke achhe se mila lein.
Imli ki chutney aur swaad anusaar namak dalke, 2-3 minute tak pakayein.
Aanch se utar lein aur thoda thanda hone dein.
Dabeli Assemble karna
Pav buns ko beech mein se kaatke, halka makhan laga ke garam tawa par toast karein.
Bun ke ek side pe imli ki chutney aur doosri side pe lehsun ki chutney lagayein.
Bun ke neeche wale hise pe tayar aloo ki bharai ka ek accha hissa rakhein.
Bareek kata pyaaz, anar ke dane, bhuni hui moongfali, nylon sev aur hara dhaniya chhidkein.
Upar se bun ka upper hissa rakhein aur halka dabayein.
Baaki buns aur bharai ke sath dohraayein.
Parosna
Dabeli ko turant parosein aur sath mein extra imli aur lehsun ki chutney rakhein.
Tips
Dabeli masale ki teekhaapan apne swaad anusaar adjust karein.
Vividhata ke liye aap kaddukas kiya hua paneer ya anya toppings bhi jod sakte hain.
Buns ko kurkura hone tak toast karna sunishchit karein, isse behtareen texture milega.
