 ### Idli Recipe


Ingredients:

  • Idli Batter:

    • 1 cup Urad dal
    • 2 cups Idli rice ya parboiled rice
    • 1/2 teaspoon Methi dana
    • Namak swaad anusar
    • Pani zaroorat ke mutabiq
  • For Steaming:

    • Idli steamer ya pressure cooker (bina seeti ke)

Instructions:

  1. Ingredients ko bhigona:

    • Urad dal aur methi dana ko achhi tarah se dhoke paani nikaal lein. Inhe 4-6 ghante ke liye paani mein bhigo dein.
    • Idli rice ko bhi achhi tarah se dhoke paani nikaal lein. Inhe bhi 4-6 ghante ke liye paani mein bhigo dein.
  2. Batter pisna:

    • Bhigi hui urad dal aur methi dana ko paani nikaal kar pees lein, thoda-thoda paani milate hue ek smooth aur fluffy batter banayein.
    • Bhigi hui rice ko bhi isi tarah pees lein, thoda-thoda paani milate hue ek smooth lekin thoda daradra batter banayein.
    • Dono batter ko ek bade bartaan mein milayein. Namak swaad anusar dal kar achhi tarah se milayein. Batter aise hona chahiye ki woh behne layak ho lekin bahut patla na ho.
  3. Batter ka khameer uthana:

    • Bartaan ko dhakkan se dhak kar 8-12 ghante ya raat bhar ke liye garam jagah par rakh dein. Batter ko uth kar foamy hona chahiye.
  4. Idli steam karna:

    • Idli ke molds ko thoda tel lagakar grease kar lein.
    • Khameer uthe batter ko molds mein dal dein, inhe 3/4 tak bharein.
    • Idli ko idli steamer ya pressure cooker (bina seeti ke) mein 10-15 minute tak steam karein ya jab tak toothpick daalne par woh saaf na nikle.
  5. Serve karein:

    • Idli ko thoda thanda hone dein aur fir molds se nikaal lein. Garma-garam idli ko sambar aur nariyal chutney ke saath serve karein.

Sambar Recipe

Ingredients:

  • Sambar ke liye:
    • 1 cup Toor dal
    • 1/2 teaspoon Haldi powder
    • 1-2 tablespoons Imli pulp
    • 2-3 cups Mixed vegetables (gajar, aloo, baingan, drumstick, etc.), kati hui
    • 1 Tamatar, kata hua
    • 1-2 Hari mirch, kati hui
    • 1 Pyaz, kata hua (optional)
    • 1 teaspoon Rai
    • 1 teaspoon Jeera
    • 1-2 Sukhi lal mirch
    • Ek chutki Hing
    • Kuch Curry patte
    • 1 tablespoon Sambar powder
    • 1-2 tablespoons Tel
    • Swad anusar namak
    • Taza dhaniya patte garnish ke liye

Instructions:

  1. Dal pakao:

    • Toor dal ko achhe se dho lo aur pressure cooker mein haldi powder aur paani ke sath soft aur mushy hone tak pakao (lagbhag 3-4 seeti). Dal ko mash kar lo aur side mein rakh do.
  2. Imli pulp taiyar karo:

    • Imli ko garm paani mein 10-15 minute tak bhigo do. Pulp nikaal kar side mein rakh do.
  3. Sabziyan pakao:

    • Ek bade bartan mein tel garam karo aur usme rai, jeera, sukhi lal mirch, hing aur curry patte daalo.
    • Kata hua pyaz daalo (agar istemal kar rahe ho) aur translucent hone tak bhuno.
    • Mixed sabziyan daalo aur kuch minute tak bhuno.
    • Kate hue tamatar, hari mirch aur namak daalo. Tamatar soft hone tak pakao.
  4. Combine aur cook karo:

    • Paki hui toor dal ko sabziyon ke sath bartan mein milao.
    • Imli pulp aur sambar powder daalo. Achhe se milao.
    • Zarurat ke mutabiq paani daalo taki sambar thoda patla ho.
    • Isse 15-20 minute tak slow heat par sim karne do taki saare flavours acche se mix ho jayein.
  5. Garnish aur serve karo:

    • Taza dhaniya patiyon se garnish karo.
    • Garam garam sambar ko idli, dosa ya chawal ke sath serve karo.
