DESI STYLE TASTY UTTAPAM RECIPE IN HINDI




 
Uttapam Recipe: 

Ingredients

Ghol ke liye

2 cup chawal

1 cup urad dal (split black gram)

1/2 teaspoon methi ke dane

Swaad anusaar namak

Pani jarurat ke anusaar

Topping ke liye

1/2 cup bareek kata pyaz

1/2 cup bareek kata tamatar

1/4 cup bareek kati hari shimla mirch (capsicum)

1/4 cup kaddukas ki hui gajar

2-3 bareek kati hari mirch

1/4 cup bareek kata hara dhaniya

Swaad anusaar namak

Tel pakane ke liye

INSTRUCTIONS:

Ghol taiyar karna

Samaan bhigona: Chawal aur urad dal ko alag-alag dho lein. Inhe lagbhag 4-6 ghante ke liye paani mein bhigo dein. Urad dal mein methi ke dane bhi daal dein.

Ghol peesna: Bhige hue chawal aur urad dal ko chaan lein. Inhe alag-alag pees lein, jarurat ke anusaar paani daalein. Dono paste ko ek bade bartaan mein mila lein.

Ghol ko khameer uthana: Ghol mein namak daalein, achhe se milaayein aur bartaan ko dhak dein. Isse raat bhar ya lagbhag 8-12 ghante ke liye garam jagah par khameer uthne dein.

Topping taiyar karna

Sabziyan kaatna: Pyaz, tamatar, shimla mirch, gajar, hari mirch aur hara dhaniya bareek kaat lein. Inhe ek bartaan mein milaayein aur swaad anusaar namak daalein.

Uttapam banana

Pan garam karna: Ek non-stick ya cast-iron pan ko madhyam aanch par garam karein. Ise halka sa tel lagaakar chikna karein.

Ghol dalna: Pan ke kendra mein ek karchhul ghol daalein aur ise halka sa phaila dein taaki ye ek mota pancake bane (lagbhag 1/4 inch mota).

Topping dalna: Jaldi se mishrit sabziyan ghol ke upar chhidkein. Inhe halke se spatula se daba dein.

Pakana: Uttapam ke kinare ke ird-gird thoda tel daalein. Pan ko dhak kar madhyam aanch par lagbhag 2-3 minute tak pakaayein.

Palatkar pakana: Jab neeche ka hissa sunahara bhura ho jaaye, to uttapam ko saavdhani se palat dein. Doosri taraf bhi 2-3 minute tak pakaayein jab tak sabziyan halki kurkuri aur ghol pak na jaaye.

Garamagaram parosein: Pan se uttapam nikaalein aur narial chutney, sambhar ya kisi bhi chutney ke sath garamagaram parosein.

Tips

Ghol ki sthirta: Ghol thoda gadhha hona chahiye lekin pourable.

Khameer uthana: Sunishchit karein ki ghol achhi tarah khameer uth jaaye; isse uttapam naram aur phoola hua banta hai.

Topping ki vividhta: Aap apni pasand ke anusaar kaddukas ki hui chukandar, bareek kata palak ya sweet corn jaisi anya sabziyan bhi dal sakte hain.

Parosna: Uttapam ko chutney aur sambhar ke sath garamagaram parosna sabse accha hota hai.
