### Gulab Jamun Recipe
#### Ingredients;
##### Jamun ke liye:
- 1 cup khoya (mawa)
- 1/4 cup maida
- 1/8 teaspoon baking soda
- 1-2 tablespoons doodh (jaise ki avashyak ho)
- Ghee ya tel talne ke liye
##### Chashni ke liye:
- 2 cup chini
- 1 1/2 cup paani
- 4-5 hari elaichi ke daane, kuchle hue
- 1 teaspoon gulab jal (vaikalpik)
- Kuch kesar ke reshe (vaikalpik)
#### Directions:
1. **Aata taiyaar karein:**
- Ek bade bowl mein khoya ko kaddukas karke sabhi guthliyan nikal lein.
- Khoya mein maida aur baking soda milayein aur achhe se mila lein.
- Dheere-dheere doodh daalein, ek baar mein 1 bada chamach, aur mishran ko naram aur mulayam aata banane ke liye goondh lein. Aata naram hona chahiye, lekin chipchipa nahin hona chahiye. Aate ko geele kapde se dhakkar 15-20 minute ke liye rakh dein.
2. **Chashni taiyaar karein:**
- Ek bade patile mein chini aur paani milayein. Madhyam aanch par mishran ko garam karein jab tak ki chini poori tarah se ghul na jaaye.
- Kuchli hui elaichi ke daane daalein aur chashni ko ubaal lein.
- Aanch ko kam kar dein aur use 8-10 minute tak ubaalne dein jab tak ki yah chipchipa na ho jaaye. Agar upayog kar rahe hain, to gulab jal aur kesar ke reshe daalein.
- Chashni ko bahut kam aanch par garam rakhein.
3. **Jamun ko banayein:**
- Aate ko chhote-chhote saman bhagon mein baant lein aur unhein chikne golo mein aakar de. Surface par koi daraar nahin honi chahiye taaki talne ke samay ve toot na jaayein.
4. **Jamun talen:**
- Madhyam-dheemi aanch par ek gehre pan mein ghee ya tel garam karein. Ghee garam hona chahiye, lekin dhuan nahin nikalna chahiye.
- Jamun ke gole dheere se garam ghee mein daalein. Dheemi se madhyam aanch par talen, dheere se hilaate hue taaki ve saman roop se pakein.
- Jab tak jamun sunehre bhure aur andar se pake nahin jaate, tab tak talen. Isme lagbhag 7-8 minute lageinge.
- Jamun ko ghee se nikal kar pepar towel par nikalein.
5. **Jamun ko chashni mein bhigoyein:**
- Jab jamun thoda thande ho jaayein, to unhein garam chashni mein daalein. Unhein kam se kam 1-2 ghante ke liye bhigone dein taaki ve mithas ko sokh lein.
6. **Serve karein:**
- Gulab jamun ko garam ya kamre ke tapmaan par serve karein, agar chahen to kate hue mevon se sajaayein.
