Batter ke liye:


1 cup maida

1/2 cup doodh powder

1 cup doodh

1. Batter taiyaar karein:


Ek bade mixing bowl mein maida, sooji aur doodh powder milayein.

Mishran mein ilaaychi powder, saunf, cheeni aur ek chutki namak daalein.

Dheere-dheere doodh aur pani daalein aur lagaatar milayein taaki ek chikna aur guthliyon rahit batter bane.

Batter ko bahne wali sthirata ka hona chahiye. Pani ki maatra ko avashyakta anusaar samayojit karein.

Batter ko 30 minute ke liye aaraam karne dein taaki sooji taral ko sokh le.

2. Chashni banayein:


Ek saucepan mein cheeni aur pani milayein. Madhyam aanch par garam karein, beech-beech mein hilate rahein, jab tak cheeni poori tarah ghul na jaaye.

Ilaaychi powder aur kesar ke dhaage daalein. Chashni ko ek taar ki sthirata tak ubaalein.

Gulaab jal daalein, milayein aur aanch se utaar lein. Chashni ko garam rakhein.

3. Malpua talein:


Ek flat pan ya tave par madhyam aanch par ghee ya tel garam karein.

Garam tel mein ek chhota chamach batter daalein aur use halka sa phailaayein taaki ek chhoti pancake bane.

Kinare sunahre aur kurkure hone tak talein. Palte aur doosri taraf bhi sunahra hone tak pakaayein.

Malpua ko ek chhidrit chamach se nikaalein aur atirikt tel nikaalein.

4. Chashni mein duboaein:


Tale hue malpua ko turant garam chashni mein duboaein.

Ek minute ke liye bhigoaein, phir nikaal kar ek serving plate par rakhein.

Bache hue batter ke sath prakriya ko dohraayein.

5. Parosein:


Malpua ko kate hue badaam aur pista se sajaayein.

Garam ya kamre ke taapmaan par parosein. Apne ghar ke bane malpua ka aanand rabdi (gadha meetha doodh) ke sath lein taaki swad doguna ho jaaye.
