MASALA DOSA RECIPE





Masala Dosa Recipe: 

### Ingredients:


#### Dosa Batter ke liye:

- 1 cup kaccha chawal

- 1 cup ubla hua chawal

- 1/2 cup urad dal

- 1/4 cup poha (chiwda)

- 1/4 chamach methi dana

- swaadanusaar namak

- avashyakta anusaar paani

- tel ya ghee (pakane ke liye)


#### Aloo Masala ke liye (Vaikalpik, Masala Dosa ke liye):

- 3-4 bade aloo (ubale aur masele hue)

- 1 badi pyaaz (patli kati hui)

- 2 hari mirch (lambaai mein kati hui)

- 1 chamach rai

- 1 chamach urad dal

- 1 chamach chana dal

- 1/2 chamach haldi powder

- kuch curry patte

- swaadanusaar namak

- tel (pakane ke liye)

- taaza dhaniya patte (kata hua, sajaawat ke liye)


### Instructions:


#### Dosa Batter tayar karna:

1. **Bhigona**: Kaccha chawal, ubla hua chawal, urad dal, methi dana aur poha ko achhe se dhokar kam se kam 4-6 ghante ya raat bhar ke liye paani mein bhigo dein.


2. **Peesna**: Bhege hue samaan ko paani nikal kar mixie ya geela grinder mein pees lein. Peesne ke dauraan avashyakta anusaar paani daalein, taaki ek chikna ghol ban jaaye. Iska sthirata pancake batter jaisi honi chahiye.


3. **Fermentation**: Batter ko ek bade bartan mein daalein, namak milaayein aur achhe se milaayein. Bartan ko dhak kar garam sthal par 8-12 ghante ya raat bhar ke liye rakhein, taaki yeh matra mein dugna ho jaaye aur thoda jhaagdar ho jaaye.


#### Aloo Masala tayar karna:

1. **Tadka dena**: Ek pan mein tel garam karein. Rai daalein aur isse chadakne dein. Phir urad dal, chana dal daalkar sunahra bhura hone tak bhoonein.


2. **Saute karna**: Kate hue pyaaz, hari mirch aur curry patte daalein. Pyaaz ke paardarshi hone tak bhoonein.


3. **Aloo pakana**: Haldi powder, masele hue aloo aur namak daalein. Achhe se milaakar kuch minute tak pakaayein, taaki sab kuch achhi tarah mil jaaye. Kata hua dhaniya patta daalkar sajaayein.


#### Dosa banana:

1. **Pan garam karna**: Ek non-stick tawa ya cast-iron skillet ko madhyam aanch par garam karein. Halka tel ya ghee lagayein.


2. **Batter dalna**: Tawa ke beech mein batter ka ek karchhul daalein. Karchhul ki pichhli taraf se batter ko golakar ghumate hue patla phailaayein.


3. **Dosa pakana**: Kinare par thoda tel ya ghee daalein. Kinare uthne aur neeche ka hissa sunahra bhura hone tak pakayein.


4. **Palatna (vaikalpik)**: Yadi aap apna dosa zyada crispy pasand karte hain, to ise palatain aur dusri taraf bhi kuch second pakayein.


5. **Parosna**: Masala dosa ke liye, dose ke beech mein aloo masala rakhein, modien aur parosein. Anyatha, sada dosa nariyal chutney aur sambar ke saath parosein.
