  • Mutton Curry Recipe

    INGREDIENTS:


    1 kg mutton, tukdon mein kata hua

    2 bade pyaaz, bareek kata hua

    2 tamatar, bareek kata hua

    2 bade chamach adrak-lahsun ka paste

    2 hari mirch, cheeri hui

    1 cup dahi

    1 chamach haldi powder

    2 chamach lal mirch powder

    2 chamach dhaniya powder

    1 chamach jeera powder

    1 chamach garam masala powder

    4 bade chamach tel

    swaadanusar namak

    sajaane ke liye taaza hara dhaniya

    Sabut Masale:


    2 tej patte

    4 hari ilaaychi

    4 laung

    1 inch daalchini stick

    1 chamach jeera

    DIRECTIONS:


    Mutton ka marination:


    Ek bade katoray mein mutton ke tukde, dahi, haldi powder, lal mirch powder, dhaniya powder, jeera powder aur namak milaayein. Achhe se milaayein aur kam se kam 1 ghante ke liye, preferably raat bhar fridge mein marinate karein.

    Curry base taiyaar karein:


    Ek bade, heavy-bottomed bartan mein medium heat par tel garam karein. Sabut masale (tej patte, ilaaychi, laung, daalchini aur jeera) daalein aur ek minute ke liye bhoonein jab tak sugandh na aa jaaye.

    Kate hue pyaaz daalein aur golden brown hone tak pakaayein.

    Adrak-lahsun ka paste aur hari mirch daalein aur 2-3 minute tak bhoonein jab tak kacchi mahak gayab na ho jaaye.

    Mutton pakaayein:


    Marinate kiye hue mutton ke tukde bartan mein daalein aur 5-7 minute ke liye high heat par pakaayein jab tak mutton sab taraf se brown na ho jaaye.

    Kate hue tamatar daalein aur naram hone tak pakaayein aur mixture se tel alag hone lage.

    Mutton ko dhakne ke liye kaafi paani daalein, ubal aane de, phir heat ko kam kar dein. Dhak kar 45 minute se 1 ghante tak pakaayein, ya jab tak mutton naram na ho jaaye aur curry aapki pasand ke anusar gaadi ho jaaye. Beech-beech mein hilayein aur zarurat par aur paani daalein.

    Antim taiyaari aur parosein:


    Jab mutton naram ho jaaye, tab curry par garam masala powder chhidkein aur achhe se milaayein.

    Parosein:


    Mutton curry ko garam garam chaawal, roti, naan ya kisi bhi bread ke saath parosein.

    Tips:


    Zyada rich flavor ke liye, aap ant mein ek bada chamach ghee ya makhan daal sakte hain.

    Agar aap zyada spicy curry pasand karte hain, to aap aur hari mirch ya lal mirch powder ki matra badha sakte hain.
