Paneer Tikka Recipe
INGREDIENTS:
Marinade ke liye:
200 grams paneer, cubes mein kata hua
1/2 cup gaadha dahi
1 bada chamach besan
1 bada chamach adrak-lehsun paste
1 bada chamach neembu ka ras
1 chhota chamach lal mirch powder
1 chhota chamach haldi powder
1 chhota chamach garam masala
1 chhota chamach jeera powder
1 chhota chamach dhaniya powder
1/2 chhota chamach chaat masala
Swadanusar namak
1 bada chamach sarson ka tel
Sabjiyon ke liye:
1 medium pyaz, chokor kata hua
1 medium hari shimla mirch, chokor kati hui
1 medium lal shimla mirch, chokor kati hui
1 medium peeli shimla mirch, chokor kati hui
Garnish ke liye:
Neembu ke tukde
Taaza hara dhaniya, kata hua
Chaat masala
DIRECTIONS:
Marinade tayar karein:
Ek bade bowl mein gaadha dahi dalein aur achhe se phent lein.
Isme besan, adrak-lehsun paste, neembu ka ras, lal mirch powder, haldi powder, garam masala, jeera powder, dhaniya powder, chaat masala, namak aur sarson ka tel dalein. Achhe se milayein taaki ek smooth marinade ban jaye.
Paneer ko marinate karein:
Paneer cubes ko marinade mein dalein aur dheere-dheere coat karein.
Kati hui sabjiyan (pyaz, hari shimla mirch, lal shimla mirch, peeli shimla mirch) bhi marinade mein dalein aur achhe se milayein.
Bowl ko dhak dein aur flavors ko milne ke liye kam se kam 1 ghante ke liye fridge mein rakh dein.
Skewers tayar karein:
Oven ko 200°C (392°F) par preheat karein ya grill tayar karein.
Marinated paneer cubes aur sabjiyon ko badi-badi se skewers par thread karein.
Paneer Tikka grill karein:
Skewers ko aluminium foil se line kiye hue baking tray par ya grill par rakhein.
Paneer aur sabjiyon par thoda tel brush karein taaki ye chipke nahi.
15-20 minute tak grill karein, beech-beech mein palat te rahein, jab tak paneer aur sabjiyan halki charred aur pak nahi jayein.
Parosein:
Paneer tikka ko skewers se nikaalein aur serving plate par sajaayein.
Neembu ke tukde, taaza hara dhaniya aur chaat masala se garnish karein.
Tips:
Marination ka samay: Achhe natije ke liye, paneer aur sabjiyon ko kam se kam 2 ghante ya raat bhar ke liye marinate karein.
Shakahari vikalp: Aap isme aur sabjiyan jaise mushrooms, zucchini, ya baby corn bhi daal sakte hain.
Tandoori swad: Paramparik tandoori swad ke liye, aap paneer tikka ko charcoal se smoke kar sakte hain. Ek chhote se garam koyle ke tukde ko bowl mein rakhein, iske upar thoda ghee dalain aur bowl ko dhak dein kuch minute ke liye.
