Savor the Flavors of Mumbai: Authentic Vada Pav Recipe


Ingredients:

Vada ke liye (Potato Fritters):

3 bade aloo, uble aur mashed kiye hue

1 inch adrak, finely chopped

2-3 hari mirch, finely chopped

1 tsp rai

1/2 tsp haldi powder

Ek chutki hing

Swad anusaar namak

Fresh dhaniya leaves, chopped

1 tbsp tel

Batter ke liye:

1 cup besan

Ek chutki haldi powder

Ek chutki hing

Swad anusaar namak

Paani (zarurat ke anusaar)

Tel for deep frying

Lahsun ki Chutney ke liye:

10-12 lahsun ki kaliyan

3-4 sukhi lal mirch

1/2 cup sukha nariyal

Swad anusaar namak

Thoda tel

Serve karne ke liye:

8 pav (soft bread buns)

Hari chutney (optional)

Imli ki chutney (optional)

Instructions:

Vada banana:

Ek pan mein 1 tbsp tel garam karein. Usme rai daalein aur chhattakne dein.

Hing, chopped adrak aur hari mirch daalein. Ek minute ke liye bhunein.

Haldi powder daalein aur achhi tarah se milaayein.

Mashed aloo, namak aur chopped dhaniya leaves daalein. Sab kuch achhi tarah se milaayein aur 2-3 minute tak pakaayein.

Aanch se hata lein aur mixture ko thanda hone dein. Thanda hone ke baad, mixture se chote-chote gol banake halka sa chhapat lein.

Batter tayaar karna:

Ek mixing bowl mein besan, haldi powder, hing aur namak daalein.

Dheere-dheere paani daal kar achhi tarah fentein. Batter ki consistency itni honi chahiye ki wo spoon ke piche chipak jaye.

Lahsun ki chutney banana:

Ek pan mein thoda tel garam karein. Usme lahsun ki kaliyan aur sukhi lal mirch daalein. Lahsun ke golden brown hone tak bhunein.

Sukha nariyal daalein aur golden hone tak bhunein.

Thanda hone dein aur phir isse namak ke saath mota powder pisa lein.

Vada talna:

Ek deep frying pan mein tel garam karein.

Har aloo ke gole ko besan ke batter mein duba kar achhi tarah coat karein aur garam tel mein savdhani se daalein.

Golden brown aur crispy hone tak talein. Nikaal kar paper towels par rakhein.

Vada Pav banana:

Har pav buns ko aadha kaat lein aur chahein to thoda makkhan lagakar tawa par halka sa sekh lein.

Pav ke andar ki taraf hari chutney aur imli ki chutney lagaayein (optional).

Har pav ke beech mein ek vada rakhein.

Vade ke upar thodi lahsun ki chutney chhidkein.

Vada Pav ko garma-garam serve karein aur saath mein extra chutney dein. Enjoy karein!
