Dal Tadka Recipe

Ingredients:
Dal ke liye:
1 cup toor dal (arhar ki dal)
3 cups paani
1 medium pyaaz, finely chopped
1 medium tamatar, finely chopped
2 hari mirch, slit
1/2 tsp haldi powder
Namak swad anusaar
Tadka ke liye:
2 tbsp ghee
1 tsp jeera
1/2 tsp rai ke dane
2 sukhi lal mirch
5-6 lahsun ki kaliyan, finely chopped
1-inch adrak, finely chopped
1/2 tsp lal mirch powder
Ek chutki hing
Taaza dhaniya patte, chopped (garnish ke liye)
Instructions:
Dal Pakana:
Toor dal ko thande paani mein achhe se dhoyein jab tak paani saaf na ho jaye.
Pressure cooker mein dhoyi hui dal, paani, haldi powder aur namak daalein.
Dhakkan band karein aur medium aanch par 3-4 seeti aane tak pakayein ya phir dal bilkul soft aur mash ho jaye. Agar aap pot ka istemal kar rahe hain, toh dal ko puri tarah se tender hone tak pakayein.
Dal pakne ke baad, use halka sa mash karein aur alag rakhein.
Tadka Tayyar Karna:
Ek chhoti pan mein medium aanch par ghee garam karein.
Jeera aur rai ke dane daalein. Inhe chhidakne dein.
Sukhi lal mirch, kata hua lahsun aur adrak daalein. Lahsun golden brown hone tak bhunein.
Kata hua pyaaz aur hari mirch daalein. Pyaaz ke translucent hone tak bhunein.
Kata hua tamatar daalein aur use naram hone tak pakayein.
Lal mirch powder aur ek chutki hing daalein. Achhe se milayein.
Is tadke ko paki hui dal par daalein aur achhe se milayein.
Antim Sparsh:
Dal ko 5-7 minute ke liye simmer karein taaki sab flavors achhe se mix ho jayein.
Taaza kati hui dhaniya patton se garnish karein.
Garam-garam dal tadka ko steamed rice ya roti ke saath parosein.
Tips:
Parosne se pehle ek nimbu ka ras nichodein taaki ismein thoda tangy twist aaye.
Ek smokey flavor ke liye, aap "dhungar" method try kar sakte hain. Iske liye ek garam koyle ke tukde ko dal ke upar rakhein, us par ghee daalein aur turant dhak dein taaki smoke andar hi rahe.
