Rajma Dal Recipe
Rajma Dal, North India ka ek popular dish hai, jismein lal rajma aur masalon ka behtareen blend hota hai. Yeh poshtik aur swadisht vyanjan chawal ya soft rotiyon ke saath serve karne ke liye perfect hai. Yahaan jaane ise ghar par kaise banayein.
Ingredients:
1 cup Rajma (Red Kidney Beans)
1 bada Pyaz, finely chopped
2 bade Tamatar, pureed
1 inch Adrak, finely chopped
4-5 Lehsun ki Kaliyaan, minced
2-3 Hari Mirch, slit (taste ke hisaab se)
1 tsp Jeera
1 tsp Haldi Powder
1 tsp Lal Mirch Powder
1 tbsp Dhania Powder
1 tsp Garam Masala
Namak, taste ke hisaab se
3 tbsp Tel ya Ghee
Taaza Hara Dhania, garnish ke liye
Pani, zaroorat ke hisaab se
Instructions:
Rajma ko Bhigo:
1 cup Rajma ko thande paani se achhi tarah se dho lein.
Rajma ko kaafi paani mein raat bhar ya kam se kam 8 ghante ke liye bhigo dein.
Rajma ko Pressure Cook Karein:
Bhige hue Rajma ko chaan kar pressure cooker mein daalein.
4 cup paani aur ek chutki namak daalein.
Madhyam aanch par 6-8 seeti aane tak ya Rajma ke naram hone tak pressure cook karein.
Jab cooker ka pressure apne aap nikal jaaye, toh ise alag rakh dein.
Masala Taiyaar Karein:
Ek bade pan mein madhyam aanch par 3 tbsp tel ya ghee garam karein.
1 tsp jeera daalein aur ise chhadkne dein.
Kata hua pyaz daalein aur golden brown hone tak bhoon lein.
Fir adrak, lehsun aur hari mirch daalein. 2-3 minute tak bhoon lein jab tak kachchi mehak na chali jaaye.
Haldi powder, lal mirch powder aur dhania powder daalein aur achhi tarah se mix karein.
Tamatar ki puree daalein aur tab tak pakayein jab tak masala tel na chhodne lage.
Rajma ko Pakayein:
Jab masala achhi tarah se pak jaaye, toh usmein uble hue Rajma aur uska paani daalein.
Achhi tarah se milayein aur zaroorat ke hisaab se paani daal kar consistency adjust karein.
Namak taste ke hisaab se daalein aur 15-20 minute ke liye slow flame par pakne dein taki saare flavours achhi tarah se mil jaayein.
Ant mein garam masala daal kar final stir karein.
Garnish Karein aur Serve Karein:
Taaze kate hue dhania patton se garnish karein.
Garam-garam Rajma Dal ko chawal, jeera rice, ya soft rotiyon ke saath serve karein.
Tips:
Creamy Texture ke liye: Kuch pake hue Rajma ko chammach se mash karke masale mein daal dene se dal aur creamy ho jaayegi.
Spice Level Adjust Karein: Hari mirch aur lal mirch powder ki matra ko apne taste ke hisaab se ghata-badha sakte hain.
Taaze Tamatar ka Use Karein: Zyada authentic taste ke liye canned tamatar puree ki jagah taaze tamatar ka use karein.
